Mulled wine

Put into a pot:
- Peel of a mandarin, a blood orange, and a lemon
- 100g caster sugar
- 12 cloves
- 12 gratings of a nutmeg
- Half a stick of cinnamon
- 2 star anise
- a bay leaf
- a splash of vanilla extract
Open a bottle of wine or cider, best if it is “fruit driven” (merlot etc). Stir in just enough to cover. Stir over medium heat for 4-5 minutes or until it’s a thick syrup. Turn heat to low, add the rest of the bottle, gently warm.
